Those who win earn a power appropriate to the spirit's theme and power level. Those who lose get to "share" their body for a day, month or year with the spirit. It then uses its new fleshy vessel to perform tasks impossible for incorporeal entities.
Necromancers can commission new art from dead artists. Wealthy people and family members always want more, though there are cyclical fads of course.
Hollow undead dragons and drolems are used as necromancer lairs. Why have a tower that just sits there when a dragon can be used to not just move, but enforce the wizard's will?
Liches have retired to the Afterlife and set up their own kingdoms among the dead. Gods of undeath protect them from gods of death, the sort that hate undeath.
Magical wells dug in graveyards and battlefields allow animated dead to reach the surface faster and a place to retreat and "heal".
Mummy lords are demigods, mummified divine rulers that still have some influence on the mortal world. Some can even grant spells to worshipers.
Wastelands, those places blasted of life, can be turned into undead. These places create their own, necrotic hazards. For example, pits may have bony spikes and writhing, moaning walls.
The brains collected by brain collectors are still alive. The manifestations of spells the creature casts with those brains are tainted by the fears of those enslaved minds.
