The original novel pretty much points out that the man-made freaks in Jurassic Park are just approximates to the actual species represented. One of the geneticists tries to talk the owner of JP into creating a future generation of dino-freaks that more closely resemble the public expectations. Of cause what exactly those expectations would be in 2025 is ... undecided. The concepts of dinos' appearances have changed a bit since 1992 (I think that was the date of original publication).

I'd suggest that it might depend on the species being shot, and the ammunition type. Some modern day animals are notoriously hard to kill, so much so that only professional hunters are trusted to do so, and said hunters usually are smart enough to select the correct equipment. Most of the popular dino species are big (like much bigger than modern elephants) and some species do seem to have 'armor'.
Again going back to the original novel the chief of the original JP security detail requested LAW missiles and elephant prods for dealing with rogue dinos. His request was turned down (as it might damage company property) and he ends up getting eaten by the dinos too. 
In South Africa the Cape Water Buffalo is notorious for not dying after the first shot. It is also notorious for charging the shooter in the event of a non-lethal wound. Crocodiles are described as effectively bullet proof on the top side (I do suspect that is a slight exaggeration and that a lot of the time people shooting at crocs hit the water just above their backs). Large mammals like elephant and rhinos need to be carefully dealt with to avoid a death charge (head shots or machine guns, take your pick if you want to survive).

Just watch some footage of what the largest existing birds do to creatures that try to prey on them. The ostrich is a particularly vicious creature with very few natural enemies (expect the ones that can use firearms). The middle claw of its feet are reputed to be able to split open any predator on this continent, except maybe those bullet proof crocs, which is fortunate for both species because their habitats never cross over.
The Cassowary (native to Australia and New Guinea looks like a predator dino, and is notorious for the harm it can inflict, even on humans, even armed humans. Even humans that fed the bird. 
Having spent some of my earlier years on a small holding I'm not that impressed by most of the chicken breeds fighting skills. They need to be trained and armed (steel or razor spurs) to do real damage. You want some thing dangerous out of a farm yard look at geese, Yeah, I know you're thinking what geese, that lovely white darlings that crap in the pool and destroy random vegetation for no apparent reason, yeah them. Given the right motivation (like someone threatening their young or someone delivering their breakfast a little less quickly than they like) they form a mob and attack with their wings. I never actually witnessed it but a goose mob can and will break limb bones, and once the victim falls over they'll carry on beating until they are satisfied.
